Luscious Leftover Part Deux

I can’t stop the leftover love.  Here, I crisped up leftover stuffing and topped with 2 soft eggs. Delish. Photo: Becca Henry.

I adore leftovers at Thanksgiving. I feel loved all week. Here, I made a turkey wrap with stuffing and cranberry relish. Delightful. Photo: Becca Henry.

Michael Symon…you are a turkey god

This was one amazing 18 pound bird. Thanks to Chef Symon for showing me how it’s done. Now stop bothering me, I’m carnivoring. Photo: Danie Woodward.

Sausage Hash with Egg

This was so good. It was a leftovers and odd ‘n ends mish-mash. I took hot breakfast sausage, red onions, cannellini beans and tomatoes and made a savory hash then serve it with a soft egg. Yum. I did a whole pan and enjoyed this for dinners and breakfasts.

There’s really no recipe for this. Brown your protein, add onions and garlic, deglaze with tomatoes or other liquid, then canned beans and veggies and simmer until all is tender. Then move the hash onto one side of the cast iron skillet and fry your eggs just the way you like them in the free space. Serve topped with grated parmesan and fresh herbs. Photo: Becca Henry.
