The farmer’s in the dell….and what is a dell anyways? (Admit it, most of you are thinking of Adele.) I just spent a perfect early fall morning perusing yard sales and farmer wares with my favorite sidekick Danie. Naturally, the adventure ended with us returning home ravenous. I quickly took inventory and sauteed a roasted poblano, roma tomato, and diced red onion. Then nestled it on a warm corn tortilla sprinkled with asiago cheese and topped with a dab of sour cream. Avocados are only a dollar, so I am making every attempt to enjoy some everyday. I should have a really glossy coat in a few weeks! Scallops were also on sale and voila, ceviche it is. The scallops are “cooked” for two hours in a mixture of grapefruit, lemon and herbs; served with a fresh avocado, radish, greens and minced serrano pepper. This is so succulent. A fresh avocado nestled in a warm corn tortilla with bacon lardons, red onion, radish and jalapeno. Nothing is warm except the tortilla and it’s fabulous. A great light summer meal timesaver. I usually have these ingredients around, just needed to crisp up some bacon and have it handy in the fridge for unctuous tacos all week.
