Cold Chic Pea & Corn Chowdah

Delightful summer soup. Fresh corn, canned chic peas and rosemary. The recipe calls for zucchini, so I used corn. Yep…delightful. Photo: Becca Henry.

Country Sweet Chicken

Every once in a while, I need a little bar food. Since I spent a good deal of my 20s and 30s in a bar, I consider myself a bar food snob. And pre-packaged, frozen chicken bits are not my thang. So homemade, breaded thighs it is. I use a little cornmeal in the breading for extra crispyness and my favorite hot sauce from Country Sweet Wings and Ribs in Rochester NY. The sauce is an amazing take on a hot, spicy vinegar sauce (like Frank’s) that’s also sweet. It’s sold at the local Wegman’s. Get the hot version! Photo: Becca Henry.

Cool Tarty Key Lime Pie

Cool, creamy, tart and salty….just how I like all my…errr……desserts. I put my own spin on this by using a pretzel crust. Photo: Becca Henry.

Mary Had a Little Lamb and It Was Delicious

So lamb-a-licious. Fresh ground lamb mixed with spices, peppers and shredded onion. Grilled over charcoal with kale and an artichoke and served with a garlicky, minty Greek yogurt sauce. And, if you’re not growing mint in your garden, window or old shoe, you are paying too much! Photo: Danie Woodward.

Roasted Eggplant, My New Obsession

Last night was such an enjoyable evening with great people. And the star of the show (besides the impromptu karaoke and writing of a Broadway musical…that’s right we’re show people) was the roasted eggplant salad. Remember Santa, there ain’t no chimney high enough. Photo: Becca Henry.
